Fresh Basil


Basil is my absolute favorite herb and it is growing like mad outside so before all the rabbits start getting into it, I made some pesto.

Classic Basil Pesto

5 cups packed fresh basil leaves
1/4 cup pine nuts or walnuts
1 large clove garlic, peeled
Salt and freshly ground black pepper
1/2 cup extra-virgin olive oil, more for storing
1 cup of fresh grated Parmesan cheese

Pulse the basil, pine nuts or walnuts, garlic, 1/2 tsp salt and 1/8 tsp pepper in food processor until finely chopped. Slowly pour the olive oil through a feed tube, stopping to scrape the sides of the bowl as needed, until the mixture forms a thick paste. Transfer to a medium bowl and stir in the parmesan. Season to taste with more salt and pepper.
